To prepare these kebabs, first I prepared masala powder that you can store for the long run and whenever to prepare Gola kabab you can simply use this masala powder. This step is time-saving and makes it easy for you to prepare kabab whenever you want.

Gola kabab is a traditional dish in the sub-continent. People from Pakistan, India, and Bangladesh love to have it and make it in a different style with mutton and chicken. Here in this recipe, I am using mutton as it has special flavor and texture to prepare soft, juicy and chewy kabab. I used natural meat tenderizer (raw papaya) to make soft kababs. If you are at a place and don’t have access to raw papaya then simply use a meat tenderizer. Along with this, you can use the same recipe to grill and make it as a barbeque.

  1. Mutton Mince (Keema) – 500 gms
  2. Oil – To shallow fry
  3. Cumin Seeds (Zeera )- 1 Tsp
  4. Whole Red Pepper (Sabut Laal Mirch) – 8
  5. Coriander Seed (Sabut dhania) – 1 Tsp
  6. Gram Flour (Besan) – 1.5 Tbsp
  7. Garam Masala Powder – 2 Tsp
  8. Red Chili Powder (Pisi laal mirch) – 1 Tsp
  9. Coriander Powder (Pisa dhani) – 1 Tsp
  10. Black Pepper Powder (Pisi kali mirch)- 1/2 Tsp
  11. Ginger Garlic Paste (Pisa adrak lehsun) – 2 Tsp
  12. Brown Onion (Tali pyaz) – 1 Tbsp
  13. Salt – 1 Tsp
  14. Raw Papaya (Kacha pappita) – 2 Tsp
  15. Fresh Coriander (Hara dhania) – Few leaves
  16. Oil – 1 Tsp

INSTRUCTIONS

  1. Preparation of Gola Kabab Masala
    Preparation of Gola Kabab Masala Powder: In a pan, add Cumin seeds (zeera), whole red pepper (sabut laal mirch), coriander seeds (sabut dhani).
  2. Toast it
    Toast it until it gets aromatic. Take it out!
  3. Add gram flour
    In the same pan, add gram flour (besan) and toast on low heat. As it showing light brown color than take it out. Keep stirring the gram flour otherwise, it will be burn.
  4. Add toasted spices
    Now add toasted spices and gram flour in the grinder.
  5. Add garam masala powder
    Also add garam masala powder, red chili powder, coriander powder, black pepper powder.
  6. Grind all the ingredients
    Grind all the ingredients to get a smooth powder.
  7. Add mutton mince
    Now in the grinder, add mutton mince (keema).
  8. Add ginger garlic paste
    Also add ginger garlic paste, brown onion, salt, raw papaya (as meat tenderizer), Gola kabab masala and fresh coriander.
  9. Grind the meat
    Grind the meat with all ingredients to get a smooth paste.
  10. Now take the meat
    Now take the meat out from grinder and place in a bowl.
  11. Add 2 Tsp oil and mix well
    Add 2 Tsp oil and mix well. It will help you to make smooth kabab and will remain juicy after frying.
  12. Now take a small portion of meat
    Now take a small portion of meat in hand and make a small ball.
  13. Prick the skewer in a bowl
    Prick the skewer in a bowl to make whole in kabab. (Watch in the video to get easy direction).
  14. Now shallow fry all kabab
    Now shallow fry all kabab. You can also grill and prepare a barbeque.
  15. Serve! Gola kabab is ready
